The ingredients for making Phu Quoc-style Bun Quay are quite simple and include:

  • Fresh noodles
  • Purple onion
  • Fresh and dried shrimp

  • Lemongrass (2 stalks for 350 g of shrimp)
  • Kumquat (6 fruits)

The method for making Bun Quay is as follows:

  • Ingredient preparation: Peel, devein, and clean the shrimp. Wash the shrimp shells and heads to cook the broth later. Divide the lemongrass into 2 portions, finely chop one portion with the shrimp, and pound the remaining portion. Soak the dried shrimp, rinse and remove any impurities, blanch the noodles in boiling water and then drain, and finely chop the onion leaves last.
  • Marinate the shrimp and fish cakes: Chop the purple onion and mix it with the fish cake. Mix ground shrimp and fish cakes with seasonings. Marinate in the refrigerator for 15 minutes.
  • Cook the broth: Stir-fry minced lemongrass, shrimp heads, and shrimp shells until fragrant. When the shrimp turns red and dry, add the dried shrimp and stir-fry. Pour in filtered water, add lemongrass and purple onions to the mixture, and heat over high heat until it boils. Season the broth, remove the shrimp shells and purple onions, and add squid if you have any.
  • Preparing the dipping sauce: Stir sugar, salt, pepper, fresh chili, and tamarind water until the sugar dissolves. Season to taste.
  • To complete the Bun Quay: Spread a thin layer of fishcake and shrimpcake around the inside of the bowl. Pour the boiling broth into the bowl and cover tightly for 5 minutes. Add the noodles to the bowl, top with toppings, and sprinkle with more onion leaves and pepper.
