Set between tropical gardens, the swimming pool and the sea, Cyan is a place where the rhythm of the day shapes the dining experience. Lunch unfolds in the easygoing spirit of a beachside escape, with fresh seafood and comforting favourites. As afternoon gives way to evening, the kitchen turns its attention to the remarkable diversity of Vietnamese cuisine.
Vietnam’s culinary identity is deeply connected to its geography, with distinctive ingredients, cooking traditions and flavours from the highlands to the coast. Cyan’s dinner menu draws inspiration from this diversity, bringing regional Vietnamese specialities into a relaxed island setting.
Among the notable dishes are highland bamboo pork, kaffir lime mountain chicken and a southern-style lotus seed hummus. Each offers a different expression of Vietnam’s culinary landscape, from the distinctive character of highland cooking to the fragrant citrus notes of kaffir lime and the gentle, nutty flavour of lotus seeds.

The restaurant’s philosophy, captured in the phrase “From Ciao to Xin Chào,” reflects a meeting of two cultures. It is a celebration of Italian culinary heritage, seen through the lens of life on Phu Quoc Island.
The menu opens with antipasti that balance Italian tradition with ingredients from land and sea.
